The Schtick: Produced at roughly 5000 feet above sea level, the Espadin for DM Chichicapa is double distilled in copper stills after 6-8 days of fermentation in San Balthazar Chichicapa. Let’s dive in.

Age: NA

Nose: Honey, cereal, faint ash, sweet waffle cone. Light blueberry note. Faint frosting note. Sweet, lightly fruity, mildly ashy. Nice complexity.

Taste: Nice complexity here as well. Medium mouth feel. Some honey, mostly ashy smoke. Nice light melon character. Heat very much in check.

Finish: Long, ashy, nice smoke component. The sweetness is greatly dialed back. Earthy and mineral forward.

Overall: Delightful and different. Lots of complexity here. Big fan. It’s commonly recommended for a reason.
