Nose: Sweet and pungent. Plum, sassafras, toffee, allspice, clove and citrus.

Taste: Medium mouth feel, no heat. Lots of plum, raspberry, lemon, citrus, clove and honey. Lightly vegetal – almost a rhubarb cranberry note to blend nicely with allspice and brown sugar.

Finish: Rich and sweet – mostly clove, allspice, celery bitters, honey and brown sugar.

Overall: Fine on its own, a delightful workhorse in a variety of cocktails, Pimms maintains a classicly distinct set of notes that work great with a variety of bases.
