The Schtick: This is a Tobala distilled by Alberto Martinez Lopez for 5 Sentidos, using agave 8-15 years in age. Crushed by hand with mallet, fermented 4 days in a hide and distilled on clay, this should be a total flavor bomb. Let’s get to it. Batch TBCUERO01-19

Nose: Sweet with lemon, honey, pepper, lemongrass and some olive. Nice salinity and minerality.

Taste: Medium mouth feel with lots of lemon, pepper, smoke and minerality. Honey, faint brine, light chemical smoke to it. Really crisp minerality here, bringing a lot of flavor.

Finish: Long and unbudging. Smoky and mineral forward with fresh cut grass, pepper, a faint paper note.

Overall: This is interesting – a smoky, mineral forward Tobala that engages the savory side of things without going overboard. Impressive distillate for sure.
