Review #1631 – 5 Sentidos Tobala

The Schtick: Distilled from agave Tobala, around 8-15 years old, this expression from Tio Pedro is distilled on clay after fermenting in pine tubs. This batch, LOTE:TBTP01-19MX, yielded 85 liters. Let’s dive in.

Age: NA

Nose: Big, bold, sweet, fruity. The clay is king here, pairing nicely with mango, kiwi and lime. Rich cream cheese, icing, vanilla bean. Funky but not sour, sweet but not cloying. Ripe and juicy.

Taste: Sweet at first, then pepper and clay storm in. A rich meatiness, some minerality. Charcoal and cedar wood notes. Big and juicy, mango and papaya on the back palate.

Finish: Long, ashy, mineral forward and loaded with clay, beef bouillon, minerality, pepper and brine. The fruits are gone, leaving a pungent, savory finish.

Overall: Tio can really bring it. This is simply great, complex, and delightful. It’s hard not to love this from beginning to end.
