The Schtick: This is a Sotol produced by Bienvenido Fernandez, in a 35L batch, from a combination of Churique and Wheeleri. Distilled on copper after fermenting with wild yeast, this should present no shortage of flavor. Lets get to it.

Nose: Super savory, loaded with minerality and a ton of fruit. Salty, savory, mineral forward, hint of lime and salt. Smells like a funky and powerful gose, in the best way. Whew.

Taste: Sweet, lots of plastic, smoke, lime, curd and sweetness, cream cheese, faint ash and a really soapy note that pairs so well with the fruit and sweets. Minerality is powerful here.

Finish: Long finish, rich with smoke, ash, chemicals, minerality, wood and some lime. Powerful but interesting.

Overall: Fantastic and powerful, complex and well composed. This is excellent, in both pushing the envelope and bringing plenty to the table. Well done.
